VINIFICATION AND AGEING : The harvest is carried out by hand in 14 kg crates between the second and third ten days of October, with a careful selection of the best grapes, both on the vine and in the cellar, evaluating any over-ripening. Destemming, maceration, and cold fermentation at approximately 12-13°C. It ages for two months in second- and third-use barriques and for two months in stainless steel.
