GRAPES: 100% Nero d'Avola DOC produced in the Partinico area at approximately 350 metres above sea level, with espalier training, Guyot pruning and a planting density of approximately 5000 vines per hectare.
VINIFICATION AND AGEING: The grapes are harvested in mid-September. After destemming, the grapes are left to macerate for approximately 6 days, undergoing repeated pumping over and delestage at a controlled temperature in stainless steel tanks.
